Grapes for this wine came from our Edna Ranch property. Located just south of our winery on the outskirts of San Luis Obispo, the moderate growing conditions and deep, rich soils in this part of Edna Ranch are ideal for slow-ripening varieties like Viognier.
Winemaking
After harvest, the grapes for this wine were cold-soaked for two days before whole-cluster pressing. Fermentation took place entirely in French Acacia barriques, with 33% of them being new. The wine did not undergo malolactic fermentation to preserve its acidity. It was then aged for six months in French Acacia barriques, again with 33% being new barrels. Acacia oak barrels are known for their subtle impact and ability to promote complex aromas in the wine.
Nose: Rich aromas of honeydew melon, pear and ripe apple mix with notes of jasmine, almond, beeswax and green tea.
Palate: Medium full bodied flavors of mango, nectarine and apricot are complemented by notes of tarragon, daffodil and nutmeg with a bright, lemony finish.
