Grapes for this wine came from Moretti Canyon on our Edna Ranch property. Located just south of our winery, this canyon is in the foothills of the Santa Lucia Mountains. The cooler growing conditions and marine-based soils here are ideal for varieties like Sauvignon Blanc.
Winemaking
After harvest, the grapes for this wine were briefly cold-soaked before whole-cluster pressing. Fermentation took place entirely in French Acacia barriques, with 17% being new. The wine did not undergo malolactic fermentation to preserve its acidity. It was then aged for seven months in French Acacia barriques, with 17% being new barrels.
Nose: Clean, fresh aromas of green apple, peach, and pineapple mix with notes of lemongrass, pea shoot, lychee and white flowers.
Palate: Medium bodied, with flavors of lemon-lime, white grapefruit, honey, melon and a hint of minerality, balanced by fresh acidity.
